Curcumin (Diferuloylmethane, Natural Yellow 3, Turmeric yellow),又称姜黄素、酸性黄或姜黄色素,是天然的酚类抗氧化剂,具有抗癌、抗炎和抗氧化活性,生物利用度较差,口服利用率低。Curcumin还能抑制HDAC和p300组蛋白乙酰转移酶活性。Curcumin也可用作食用黄色色素,广泛用于食品、化妆品和医药着色。
