溶菌酶(Lysozyme)又称胞壁质酶（muramidase），是一种破坏细菌细胞壁的酶，能够提高蛋白或核酸提取效率。其主要通过破坏细胞壁中的N-乙酰胞壁酸和N-乙酰氨基葡糖之间的β-1,4糖苷键，使细胞壁不溶性黏多糖分解成可溶性糖肽，导致细胞壁破裂内容物逸出而使细菌溶解。因革兰氏阳性菌（G+）的细胞壁内肽聚糖含量很高，故对溶菌酶非常敏感。反之，革兰氏阴性菌（G-）敏感性较弱。当体系中含EDTA时，能够螯合细菌外膜的Ca2+，可以提高G-的敏感性。另外，使用溶菌酶对大肠杆菌裂解时，当加入核酸酶如DNase Ⅰ，能明显提高效率。
纯化自鸡蛋清（egg white）。
不含RNase、DNase和Protease。
在较广的pH范围内(pH 6-9.0)均有活性。
